The bakery sector has witnessed the rectification of the increases forecasted by the minutes of the meeting that took place on 28 May 2025. Unionalimentari-Confapi and Fai-Cisl, Flai-Cgil, Uila-Uil signed the minutes on 6 June 2025, making formal amendments to the wage increases initially set forth in the agreement of 28 May 2025 for employees of small and medium-sized food industry entities.
The rectified wage increment chart for the industrial baking levels during the period from 31 October 2024 to 1 January 2028 is as follows:
For the first level, the minimum wage as of 31 October 2024 was 1,690.49. This figure then saw increments of 89.17 until 1 January 2028, where the minimum wage reached 2,047.18.
For the second level, the wage was 1,558.55 on 31 October 2024 with periodic increments of 82.04, and by 1 January 2028, the wage had reached 1,886.70.
For the third level, with a subcategory of A and B, the wages were different. For 3A, the minimum wage was 1,435.72, which eventually rose to 1,737.12 by 1 January 2028 in increments of 75.35. For 3B, the initial minimum salary was 1,336.4, and after increments of 70 at each interval, it reached 1,616.40 by January 2028.
The fourth level started at 1,127.38 with increments of 59.30. This level had a final total of 1,364.56 by 1 January 2028.
The fifth level had a starting wage of 1,004.07, which increased by 53.06 at each interval and reached 1,216.30 by 1 January 2028.
Finally, the sixth level had a minimum wage of 845.74 as of 31 October 2024. After increments of 44.59 at each interval, it reached 1,024.08 by the beginning of 2028.
These amendments demonstrate the efforts to ensure a fair wage increment system within the small and medium-sized food industry, specifically in the bakery sector, over a span of four years. The gradual increases in base wage levels reflect a consistent and structured approach to improving the wages of industrial baking employees.
