In November 2025, salary increases stipulated by the National Collective Labour Agreement (CCNL) of July 18, 2024, will be implemented. This was announced by the Italian Bakery Federation, Bakery Pastry Chefs and Associates on November 27, 2025. As they await the signing of a new sector CCNL, businesses will be permitted to apply the provisions of the contract signed on July 18, 2024, solely for the purpose of adjusting economic treatment. Therefore, starting from the November 2025 paychecks, new economic increases will be applied.
Of these increases, a sum equivalent to 50.00 euros had already been granted from October 2023 as an absorbable super minimum from future contractual increases. Trade unions are urging businesses to communicate this information to all workers, retaining a signed copy.
The adjustments were detailed for both Artisan and Industrial Bakeries sectors. For the Artisan sector, classification groups A and B are shown. Group A’s levels range from standard A1 to A4, and A1 Super, with adjustable increases ranging from 108.26 euros for A1 Super to 42.66 euros for A4. Group B classifications range from B1 to B4, including B3 Super, with adjustable increases ranging from 104.16 euros for B1 to 32.00 euros for B4.
For the Industrial Bakeries sector, levels are listed from 1° to 6°, with adjustable increases ranging from 212.00 euros for level 1° to 81.00 euros for level 6°. In both instances, the absorbable super minimum from October 1, 2024, was 50.00 euros, with the increase from November 1, 2025, adjusted per the values listed per level or classification group. The point value from the parameter was also included, at 0.82 for the Artisan sector and 1.31 for the Industrial category.
